I'm delighted to see the splits on the 'Huat Kueh'. I'd waited very long before attempted this since there are many different recipes. According to the author of this recipe, she stressed that the type of sweet potato used is critical to the blooming effect. I used the japanese purple sweet potato from Indonesia for this trial and the colour is rather nice.
